Refreshing Mint and Mango Sorbet

Summer's just around the corner and I've been thinking of a light, tangy dessert that my husband and I will enjoy on hot humid days. He just loves all sorts of tropical fruits, particularly ripe mangoes so I created this recipe to make the most out of the fruit, which can be expensive.

Since this sorbet is made from 100% fruit, it's easy on the waistline and packed with antioxidants without artificial sweeteners. It's delightfully sweet thanks to the juicy mangoes with a hit of minty goodness, just the way I like it! The best part? It only takes minutes to create this delicious frozen treat!

A couple of notes before we get started, this recipe requires a power blender, one that can process ice and frozen fruits. Also, if you like your sorbet firm, I highly recommend sticking the finished dessert in the freezer for 30 minutes or so before serving. Finally, if you're not a fan of mint or you'd rather enjoy the natural sweetness of the mangoes, you can skip the mint extract/sprig and raw honey.

Refreshing Mint and Mango Sorbet

You will need:

  • 3 cups frozen mango cubes
  • 2 tablespoons lime juice
  • ​2 sprigs fresh mint
  • ​½ cup water
  • ​2 tablespoons raw honey
  • A few drops of mint extract

Instructions

In a power blender, combine all ingredients and pulse until the frozen mango has been broken into bits. You may need to scrape the sides down as you pulse. Stop for a moment to taste and adjust the ingredients according to your taste. Once the frozen mango has been crushed, blend on high until you get a smooth consistency. Using a spoon, pour the sorbet into serving glasses then serve immediately!
