Lemon Herb Chicken

I work full time and most days, I've no time to cook and this is basically the reason why I love my crockpot! I come home with a hot dish ready to serve. Today, I'm sharing one of the easiest herb and lemon chicken you'll ever make. The recipe only needs a few healthy ingredients and prep time is pretty straightforward! This family-friendly dish is best for days when you are pressed for time but you want something nice (and nutritious!) for dinner.

I love the balanced between the herb and the chicken, it's so savory! I typically serve this with a side of green salad tossed with balsamic vinegar but the kids love it with cauliflower rice. If you cannot find fresh thyme, use about a teaspoon of dried thyme. Also, don't add water to get that rich umami taste!

Lemon Herb Chicken

You will need:

  • 1 whole chicken
  • ¼ cup fresh lemon juice
  • ​5 springs of fresh thyme OR 1 teaspoon dried thyme
  • ​2 bay leaves
  • ​5 whole cloves of garlic, peeled
  • ​1 teaspoon sea salt
  • ¼ teaspoon black pepper


Step 1: Clean the chicken under running water, removing the giblets and unwanted bits. Place the chicken in the crockpot then pour the lemon juice. Massage the meat with sea salt, thyme, and pepper. I usually insert the herbs inside the chicken's cavity to absorb all the flavors. Add the garlic cloves and bay leaves.

Step 2: Close the lid and cook the chicken on low for 9 to 10 hours. If you're pressed for time, cook on high for 4 to 5 hours. You know the chicken is done when the tender meat is practically falling off the bone. Transfer the chicken to a serving plate and enjoy! Store the rest in the fridge and it will keep up to 4 days.
