Paleo Carnitas And Nachos on Table

  • 3 ½ lbs. pork roast
  • 1 cup chicken broth
  • 1 Tbsp. dried Thyme
  • Olive oil
  • 4 Bay leaves
  • Salt & Pepper to taste
  • Small sweet peppers (halved)

  • Rub a generous amount of salt and pepper into your pork roast so that it is well coated.
  • Heat some olive oil in a skillet.
  • When hot, add pork and brown it on all sides (about 2-3 minutes each side).
  • Add pork to crock pot along with other ingredients (except the sweet peppers).
  • Cook on low setting for about 6 hours. Alternatively: make it a day ahead and after it is done cooking, allow it to soak in the broth overnight for extra juiciness.
  • Shred the pork.
  • Fill sweet pepper halves with the shredded pork. Bake in the oven for about 10 minutes at 350 degrees Fahrenheit.
Paleo Nachos on Plate

One of the best things about this recipe is that it’s easy to vary it or add things. If you eat dairy, add a bit of shredded cheddar on top of the carnitas before baking them. You could also use larger bell peppers and add an egg to each one along with the meat.

Basically, stuff these with any of your favorite ingredients! Plus, the shredded crock pot pork also makes a great base for a pulled pork recipe! You’ve got no shortage of options for changing this up and making it new and different each time you make it. And it is such an effortlessly simple recipe!

Paleo Bread Recipe

One of the hardest things to give up is bread when you go paleo. It’s just so simple and convenient! This recipe makes a delicious paleo bread that is perfect for sandwiches! You will be surprised just how much this recipe tastes like bread without a single bit of grains in it!
