I prefer rich, decadent desserts but some days, I crave for simple sugar cookies. My sugar cookies may look plain but trust me, they are anything but. Apart from being diet-friendly, my Paleo sugar cookies are 100% dairy and grain free. The cookies are made from cashew nuts so it has that creamy umami taste that I love. Personally, I pair sugar cookies with sparkling rosé but it goes well with hot tea and coffee too!
One important thing you need to keep in mind while making this particular sugar cookie is that you need to use a cold oven. Do not preheat the oven or the timing will be off.

Step 1: In a food processor, grind the raw cashew nuts into a fine flour then gradually add the coconut flour, baking soda, sea salt, and tapioca flour, pulsing as you combine the ingredients. Then, pour in the ghee, egg, raw honey, vanilla extract, and pulse to create the dough.
Step 2: In between two sheets of parchment paper, roll out the dough and cut using a cookie cutter. Place each cookie on the parchment paper and stick in the oven. Bake for 15 to 20 minutes at 350 degrees Fahrenheit.
Step 3: Once the cookies are done baking, take the baking sheet out of the oven and leave the cookies to cool for 15 minutes. Transfer to a cooling rack to cool completely. Serve and enjoy!
