Chewy Glazed Choco-Coconut Macaroons

You will need:

Macaroon base ingredients

  • 4 egg whites, beaten
  • 3 cups unsweetened shredded coconut
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons coconut oil, melted and cooled
  • ¼ cup pure maple syrup
  • A pinch salt

  • ½ cup Paleo dark chocolate chips
  • Pistachios walnuts, pecans, roughly chopped
  • Candied ginger, finely chopped
  • Flaked or shredded coconut

Step 1: Start by preheating the oven to 350 degrees Fahrenheit and lining a baking sheet with parchment paper then set aside.

In a mixing bowl, beat the egg whites until foamy then gradually add the rest of the macaroon ingredients. Stir well so all ingredients are incorporated fully. The macaroon base should be thick and sticky.

Step 2: Scoop a dollop of the macaroon base and place each one on the baking dish. Make sure to leave about half an inch of space in between the macaroon rounds. Stick in the oven and bake for 15 to 17 minutes or until the tops turn a golden brown. Remove from the oven once the macaroons are done baking and allow to cool for 5 minutes before lifting them off the cookie sheet carefully using a spatula.

Step 3: Now's the time to make the glaze! In a microwave safe mixing bowl, pour in the dark chocolate chips and microwave at 15-second intervals, stirring in between intervals until the choc is melted. Allow the melted chocolate chips to cool and thicken slightly.

Step 4: Here comes the fun part, dressing the macaroons. Dip each macaroon into the chocolate glaze, top first then sprinkle with your choice of toppings before the glaze sets. Place the glazed macaroons on a serving plate and enjoy!
